Miso Glazed Tofu Stir Fry

This miso glaze stir fry is salty and sweet thanks to the agave nectar that sticks to the crispy tofu pieces and glazes all the elements. The garlic and ginger also give it an Asian accent that is bursting with flavour. By using a few key ingredients (such as miso paste, agave, garlic, ginger and sesame) you can create a quick, tasty and inexpensive dish that is high in protein and very nutritious.

Miso Glazed Tofu Stir Fry

Ingredients

  • 1 tbsp sunflower oil
  • 1 tsp sesame oil
  • 250g extra firm tofu
  • 2 tsp miso paste
  • 2 tsp agave nectar
  • 100g broccoli
  • 1 salad onion (or 4 spring onions)
  • 2 clove of garlic
  • 1 tsp grated ginger
  • 1 carrot
  • 1 tbsp sunflower oil
  • 1 tsp sesame oil
  • 9 oz extra firm tofu
  • 2 tsp miso paste
  • 2 tsp agave nectar
  • 3½ oz broccoli
  • 1 salad onion (or 4 spring onions)
  • 2 clove of garlic
  • 1 tsp grated ginger
  • 1 carrot

Instructions

  1. Heat up the oil in a wok on a high heat
  2. Dice the tofu into bite size pieces and pat all sides dry with a kitchen towel to remove excess moisture
  3. Add the tofu to the wok and stir fry until all the sides are golden and crisp. This should only take 3-4 minutes.
  4. Cut the broccoli into florets and the slice the salad onion (or spring onions) and add to the wok. Stir fry for about a minute.
  5. Slice the garlic cloves lengthwise and grate the garlic. Add and stir.
  6. Add the miso paste, sesame oil and agave nectar and mix well. You can add 2 tbsp of water to the pan to loosen the miso paste so that it glazes the tofu. The agave nectar will make the sauce bubble and stick to the tofu pieces.
  7. Serve with ready cooked brown rice and garnish with sesame seeds.
