
This is a simple and quick salad to prepare that is very tasty and satisfying. The avocado provides a lovely richness to the dish and the quorn (use vegan if you can) is a good source of protein. This is a great dish to make in advance and a healthy alternative to other pasta salads which are laden with fatty sauces.

Ingredients
- 175 g pasta
- 1 large avocado
- 125 g meat free quorn pieces
- 125 g cherry tomatoes
- 1 tbsp olive oil
- squeeze of lemon juice
- handful of salad leaves
- 1 tbsp coriander leaves
- 3 spring onions
- 1¾ cups of pasta

Instructions
- Boil the pasta in a pan with water from a recently boiled kettle.
- In the meantime slice the tomatoes into quarters, the spring onions into strips and the avocado into bite size pieces.
- In a frying pan sauté the meat-free quorn pieces until browned on the outside. Leave to one side.
- Drain the pasta when done, rinse with cold water and drain once more and add to the bowl with the tomato, avocado and quorn.
- Chop the coriander, add a squeeze of lemon, some olive oil and toss to mix well.
- Add the salad leaves, mix well and serve.
