Lemon and Cinnamon Cake Recipe

Lemon and cinnamon is a classic combination of many traditional sweets in Gibraltar and Spain, so why not have it in a cake? This cake is super spongy, light and moist. The combination of lemon and cinnamon is a match made in heaven, maybe because I am used to it, but I believe it works very well in cake. What’s more this recipe is completely dairy free and vegan!

Aside from being vegan this lemon and cinnamon cake is also ridiculously easy to make. As with many vegan cakes, the egg is replaced with vinegar which acts as a leavening agent with the bicarbonate of soda, giving the cake the lift and sponginess. The vinegar cannot be tasted and works very well, so there is no need for eggs.

When I made this for the family they loved it. None of them could tell it was dairy free and vegan, and I didn’t say!

Lemon and Cinnamon Cake Recipe

Ingredients

  • 300 g plain flour
  • 300 g granulated sugar
  • 125 g margarine
  • 1½ tsp bicarbonate of soda
  • ½ tsp fine salt
  • 360 ml soya milk
  • ½ tsp vanilla extract
  • 1½ tbsp apple cider vinegar
  • 1½ tbsp cinnamon
  • zest of 3 large lemons
  • 2½ cups of all purpose flour
  • 1½ cups of white sugar
  • 4½ oz margarine
  • 1½ tsp bicarbonate of soda
  • ½ tsp fine salt
  • 1½ cups soya milk
  • ½ tsp vanilla extract
  • 1½ tbsp apple cider vinegar
  • 1½ tbsp cinnamon
  • zest of 3 large lemons

Instructions

  1. Preheat the oven to 150C (300F) fan.
  2. Sieve the flour, cinnamon, salt and bicarbonate of soda in a bowl.
  3. Add the lemon zest and sugar and mix.
  4. Melt the margarine somewhat so that it is soft and combines easily. Add to the flour mix, together with the soya milk and vinegar. Mix well until it is all combines.
  5. Grease a 20 cm (8 inch) round spring-form cake tin and line with grease-proof paper. Pour the cake mix and bake for 1 hour to 1 hour and 10 minutes, in a 150C (300F) fan oven.
    Note: You can also bake in a 22 cm (9 inch) square tin for 45 minutes.
