Puff Pastry Pizza Recipe

Who doesn’t like pizza? We all have our favourite and personally I think making them is half the fun, with the concept of pizza being so versatile. However for a long time I have preferred to make pizza with puff pastry as a base rather than bread. For one, store bought puff pastry is usually good whereas I have found store bought bread pizza bases are not so much. So if I don’t want to make the base myself then using puff pastry is the way to go. I can’t claim it is better or worse, but if you like puff pastry then you will enjoy this variation of pizza.

Puff Pastry Pizza Recipe

Ingredients

  • 230 g puff pasry, rolled
  • 250 g mozarella cheese
  • 100 g mushrooms
  • 1 green pepper
  • 50 g olives
  • 150 g cherry tomatoes
  • 1 salad onion
  • 1 green pepper
  • 1 tbsp tomato puree
  • 2 tbsp olive oil
  • pinch oregano, basil and thyme
  • 8 oz puff pasry, rolled
  • 9 oz mozarella cheese
  • 3½ oz mushrooms
  • 1 green pepper
  • 2 oz olives
  • 5 oz cherry tomatoes
  • 1 salad onion
  • 1 green pepper
  • 1 tbsp tomato puree
  • 2 tbsp olive oil
  • pinch oregano, basil and thyme

Instructions

  1. Pace the puff pastry on some grease proof paper on a baking tray and score around the edges (leaving a 1cm gap on every side) with a knife. Be careful not to pierce the pastry, you just want to score it.
  2. Pierce all around the inside of the puff pastry (inside where you have scored it) with a fork. This is so that the puff pastry doesn’t rise and acts like a pizza base.
  3. Spread the tomato puree around the inside of the puff pastry and sprinkle some oregano on top and a pinch of salt.
  4. Cut the mozzarella into slices and lay evenly on the tomato.
  5. Slice the mushrooms, peppers, onions and olives and layer them on top as you wish. I usually put the mushrooms underneath, then the peppers, the onions around and sprinkle the olives.
  6. Cut the cherry tomatoes in half and lay on the vegetables.
  7. Sprinkle with thyme and dried basil and drizzle the vegetables with olive oil.
  8. Bake in a preheated oven at 200C for 20-25 minutes.
